This minimal effort dinner is great for those evenings when it’s been a long day and you don’t want to hang about in the kitchen!
You should marinade the chicken the night before if at all possible. An hour would be ok, but the longer the better really.
Ingredients (serves 2):
2 x chicken breasts
Half a teaspoon each of paprika, cumin, turmeric, chilli powder and salt
2 x tbsp olive oil
Combine all of the spices with the oil. Mix well and pour in to a food bag with the chicken breasts. Make sure they get a good coating and leave in the fridge overnight if possible.
For the roasted veg… whatever takes your fancy! We had:
Half a butternut squash
Salt and pepper
Preheat the oven to 190°C
Throw your chopped veg of choice into a tray and drizzle all over with a good glug of olive oil and season with salt and pepper. shake the tray so all the veg gets coated with oil and seasoning. Pop it into the oven once it’s hot. Cook for around 20 mins, shaking the tray once or twice to keep it cooking evenly.
Using a hot griddle pan place the marinated chicken in the pan. Leave it for around 4-5 mins and turn it over for the same time. You’re looking to get that lovely BBQ’d effect (but indoors in Scotland :))
After about 10 mins in the pan transfer the chicken to some tin foil and wrap tightly. Place it in the oven alongside the vegetables for the last 10 mins (this could take a little longer depending on the size of your chicken pieces).
Once it’s all ready serve up alongside a big dollop of olive oil mayonnaise!
