Breakfast hash

This is basically just a load of leftovers thrown together in a pan with a couple of eggs. You can do this with virtually any combination you fancy, and it’s a great way of using up leftover stuff so you don’t waste anything.

Ingredients for this particular hash (serves 2):

Leftover roasted peppers and courgettes chopped

1 lonely leftover burger chopped in to cubes

A few cherry tomatoes chopped

4 eggs whisked

Olive oil or ghee

Salt and pepper to taste

How to:

Heat your oil in the pan on a medium setting. Add in the  chopped goods and stir fry for a couple of minutes.



Add your whisked eggs to the pan and fold and stir until they’re cooked, adding in a little salt and pepper to your liking.

Serve with sliced avocados and feel smug that you haven’t thrown out your leftovers.
