I love avocados. But I love guacamole even more. It goes with so many things, and can brighten up a dull dinner in a flash. Holy guacamole batman!


1 large avocado cubed – as ripe as possible without being off!

Finely chopped chilli – however much you want to put in. If you’re new to it, add a little at a time until you’re happy with the level of spicy-ness. The more seeds you add the spicier it will be.

Lime juice (a quarter to a half)

Extra virgin olive oil

Crushed garlic clove

Coriander to taste

Salt and pepper to taste

How to:

Cut your avocado down the middle all the way round the stone, then twist each side opposite ways to split it open. Remove the stone (if it’s really ripe it might just fall out). Score down each half lengthways and horizontally to make little cubes, then scoop it all out with a spoon in to a pasta dish.


Add in everything else. For olive oil, just drizzle it on. Using a fork mash it all together thoroughly. Time to taste. Do you need more oil or lime? Little bit extra salt and pepper? Is it spicy enough for you? Keep adding little bits until it’s just right.

Smother on anything you like!
