A bit like guacamole this salsa is a great addition to tons of dishes, and it’s awesome combined with guacamole!
Ingredients (enough for two servings):
1 or 2 ripe tomatoes finely chopped (depending on size)
1 shallot finely chopped
Chilli finely chopped chopped (depending on how spicy you want it, seeds make it spicier – go easy until you’ve tasted if you’re a bit unsure)
1 garlic clove crushed
Squeeze of lime juice
Extra virgin olive oil
Coriander to taste (could also be substituted for basil if preferred)
Salt and pepper to taste
Throw it all in a bowl and mix it together. That’s it. Carry on adding chilli, oil, lime, salt and pepper if needed until it tastes just how you want it.
