Potato salad is one of my favourite things, so I wanted to find a replacement, and it turns out that sweet potatoes in for white ones are perfect. I thought the sweetness wouldn’t work, but the sharpness of the shallots and chives work well.
1 medium sweet potato – cubed and roasted in olive oil and salt and pepper for about half an hour until tender but not mushy)
2 shallots sliced
Handful of fresh chopped chives
Squeeze of lemon juice
Salt and pepper to taste
Throw it all in a bowl and carefully mix together so as not to mash the potatoes.
Enjoy with lots and lots of things! Here, with lamb koftes and salad.
