Smoked mackerel and red pepper frittata

We eat frittatas a lot! They are a great way to use up leftovers, particularly veg which is about to keel over, and the result is an easy-to-grab breakfast or lunch… or dinner if you fancy!

Ingredients:

6 free range eggs

2 small fillets of smoked mackerel (very cheap and very tasty!)

Diced red pepper (about half-ish)

2 shallots (or some red onion) chopped

Tbsp fresh chopped chives

Pepper (there’s plenty of salt in the mackerel already)

How to:

Preheat the oven to 180ºC.

Flake the mackerel in to small pieces, removing any bones which may have been left behind.

Whisk your eggs together and add a tiny splash of water. Grind some pepper in to the eggs.

Add all of your ingredients together in a flan dish and mix with a fork to make sure it’s equally weighted.

Pop it in the oven for around 20-25 minutes or until the centre is no longer liquid.
