Whole 30 days 21-25 with meal plan

I didn’t think I’d be writing this at this stage of the game feeling exhausted. Perhaps I’m expecting too much. And I haven’t slept well the last few nights with some nightmares, so that won’t be helping either (although better sleep should be a benefit of this).

I have picked up the activity a bit though. Having not run for a couple of months due to an injured hip I ventured out a few days ago for a short and easy two-miler to test it out. I came home feeling invigorated yet sad, because it was just as sore as before. I think running will be out of the question for a while. I’ve had plenty of treatment from my massage therapist but to no avail. But! All is not lost! Cycling and walking seem to be ok, and stretching has helped, so at least I’m moving again 🙂

I’ve discovered that adding a teaspoon of flax meal to whatever I can helps me process things better 🙂 The trouble is remembering to do it! I keep meaning to add it to an omelette or some sauce or other, but forget! I may need to set a flax meal reminder. How weird is that??

The last 5 days worth of food has been experimentally wonderful! And the fella has enjoyed getting more involved and trying things out in the kitchen too, which I’ve loved. It means we spend more time together in our roomy kitchen. Great!

Day 21

Breakfast – Pork sausage patty, sweet potato hash browns, poached egg and avocado, blackberries

Lunch – Spring onion, mushroom and tomato omelette, raspberries

Dinner – Butternut squash lasagne (thanks Flash!), broccoli

Day 22

Breakfast – Sweet potato hash browns, 2 poached eggs, avocado, blackberries

Lunch – Mushroom soup, chicken salad, grapes

Dinner – Roast duck (oh yes we did!) with veg and gravy

Day 23

Breakfast – 2 boiled eggs, tomato, home made mayonnaise, nuts, grapes

Lunch – Leftover buffalo steak (torn in to small strips) with salad, avocado, mushroom soup, nectarine

Dinner – Leftover roast duck and mushrooms with butternut squash noodles (‘pasta’!)

Day 24

Breakfast – Smoked mackerel omelette (not that good, don’t do it)

Lunch – Mushroom soup, tuna mayonnaise, salad, blueberries and raspberries

Dinner – Prawn thai curry with courgette noodles

Day 25

Breakfast – Boiled eggs, avocado, tomato, mayonnaise, nuts, blueberries and raspberries

Lunch – Smoked mackerel frittata, salad, mushroom soup, nectarine, nuts

Dinner – Moroccan meatballs, roasted butternut squash, broccoli, avocado

There you have it. Some lovely new recipes to add to the catalogue. The thai curry being the biggest hit! The last five days will have a few more newbies I think, but nothing too adventurous as it’ll include feeding the wee lass. Already looking forward to roast pork with crackling. Mmmm!
