Home made coleslaw

I thought that coleslaw something was something I’d have to let go on paleo, there’s always sugar in the packaged stuff. But it doesn’t need to be there! This is a simple recipe, and I plan to try out more variations. It went really well with leftovers of the Jamie Oliver roast pork.

Ingredients (for about 4/5 portions):

1/4 white white cabbage finely sliced

1/2 a red onion grated

1 grated carrot

2 tbsp home made mayonnaise

1 tspn apple cider vinegar

Salt and pepper

Extra virgin olive oil drizzle

How to:

Throw it all in a bowl and mix it all through really well. Serve with anything you like! YUM!
