Garlic prawns and pancetta with courgette noodles

This was one of those evenings where I looked in the freezer/fridge and just pulled out what was there to see where it would lead! And it led to a yummy plate ๐Ÿ™‚

I used to eat pasta at least 3-4 times a week, and crazily, I don’t miss it at all. I find courgette noodles an excellent replacement for those meals that just need a noodle!

I used a mixture of raw prawns and cooked whole prawns that I had in a freezer. You could use either. I had also found this pancetta which had no additives or nasties, just seasoning, and was dying to use it. Tasty stuff.

Ingredients (serves 2):

Around 6-8 prawns per person

A good chunk of pancetta diced

1/2 onion sliced

2 cloves garlic crushed

1 cup rocket (washed)

2 courgettes washed and juliened

1/4 cup white wine (optional)

Squeeze of lemon

1 tbsp ghee

Chopped fresh coriander

Salt and pepper

How to:

Put a large frying pan over a medium-high heat, when it’s warm add the pancetta. Let that fry until it starts to become crispy (I like mine really crispy).

Then add in the ghee and turn down the heat to medium. Throw the onions and garlic in and cook till softening. Add the wine here if using. It’ll sizzle and the alcohol will cook off.

Next add the prawns and stir to cook through for a few minutes. If using raw ones they need to turn pink throughout.

Next add the courgette noodles. These don’t take long to cook, so stir them in to all the stuff in the pan for a couple of minutes.

Add in the rocket, coriander and salt and pepper to taste. Stir it through, and the rocket will start to wilt. Then dish up in to warmed plates and EAT IT! Immediately… Then revel in your marvellousness ๐Ÿ™‚

P.S. you can do any twist on this sort of meal – add chilli for some kick, try it with some chopped black olives, or use parma ham instead of pancetta. Have fun trying some new combinations!
