Bit of an unplanned brunch this morning. Looked in the fridge, picked out what was there, and this happened!! These are simple, yummy and the perfect thing for a weekend treat which will keep you full for a while 🙂
Ingredients (makes 2):
1 cup grated sweet potato
1 shallot – finely chopped
2 slices streaky bacon
1 tbsp chives – finely chopped
Sprinkle of smoked paprika
1 whisked egg (and another for topping the fritters!)
1 tbsp flax meal (optional)
Oil for frying (ghee, coconut oil, olive oil…whatever works for you)
Start by cooking the bacon. I grilled mine. While that’s cooking, prepare all the other ingredients and put them in a bowl together. Put a frying pan with the fat on the stove on a high heat. When the bacon is cooked chop it up and add it too.
You’ll have a mushy mixture which might feel like it’s going to fall apart. Fear not! As long as the frying pan is hot enough your mixture will form a crust.
Separate the mixture into two balls and add them to the pan one at a time, then use your spatula to press it down and create a fritter. The flatter it is the quicker it will cook. Leave it for a few minutes. You’ll know when it’s formed a crust because the whole fritter will be moveable.
Flip it over and press down again to make sure the other side cooks well, just another couple of minutes.
When they’re ready set them aside and cook your fried egg (or two!) in the pan, which should take no longer than a minute or two given how hot it is!
Serve up with something green. I chose rocket and avocado.
Then feel smug, because you just made a super-tasty and impressive brunch in less than 20 minutes 🙂
